I've taken some screenshots of some of my favourite themes on my iPhone 4, most of these are HD and specially designed for the 4 & retina display, they look awesome and really improve the whole iOS experience IMHO.

My latest favourite is sideWinderHD, it has a cool clock/calendar/weather wallpaper that syncs easily.
You'll need to downland an app called Gridlock through Cydia to place your springboard icons around the outside, or wherever you want to place them.

I havn't had alot of experience with Windows Mobile so don't have the same appreciation, or lack of it. It's just very different, that's why I like it.
Here's another one you might like, simply called "Alt Icons".

Hmmm I dunno… none of them quite have the polish of the original UI and icons. The original icons look cleaner the way they are all a uniform shape. If I jailbroke, I don't think I'd mess around with the UI. Just my opinion though.
