I've recently changed from many years of using a Palm Treo 650 to iPhone 3GS. An app that I LOVED on the Treo was one called Callrec. It's job was simple….any time you make or receive a phone call, it recorded both sides of the conversation and saved it on the phone so that you could listen to it later (and sync it back to your PC). It was a simple app that just automatically recorded whenever you used the phone – you didn't have to press a "record this call" button, and it didn't save the call on some server halfway across the world, and it didn't 'beep' every 15 seconds.
As you might have gathered from the above comments, I've played around with the supposed equivalents for the iPhone, but they are way too complex and REALLY awkward to use. I just want what Callrec did on the Treo – but I want it on my iPhone.
For me, Callrec was invaluable as it meant I could talk with customers, discuss their needs, take their orders…all without having to stop and write something down on paper. Also great for when your children phone you to ask you to do something and you're in a busy place and can't really hear what they are saying. I used to let them just rave on, then finish the call and, in a quiet place I would play back the conversation so I could understand their request.
SO useful!
Do you think this is too difficult to re-create for iPhone?

This kind of app would concern me for privacy reasons. Surely you would have to announce to everyone that calls you that they are being recorded, I don't know the laws on this but I wouldn't call you knowing you had that!
I'm sure it could be done though, any devs willing to give it a go?

Well, of course, the user has the responsibility to inform the person on the other end of the call. Not the developer
