In future this sort of question should be asked in the Jailbreaking topic. I guess it's somewhat related. No worries.
If you have restored the firmware or installed official firmware you will have lost your jailbreak and unlock. Lucky for you there is an exploit in the current baseband allowing you to jailbreak and unlock again.
So, in iTunes, update/restore to 3.1.2 — you will need a nice clean install for this.
Go to http://blackra1n.com and download the version for your OS (Mac or PC).
Follow the instructions you are told by Blackra1n. When you jailbreak you will find a new icon called Blackra1n on your home screen (with an icon like a black rain drop). Open it, and install Cydia (no others — these can interfere adversely). Open up Cydia from your home screen.
Add the blacksn0w repo by clicking the 'Manage' icon down the bottom towards the right, tap 'Sources'. Tap 'Edit' and then 'Add' (up the top). Type in http://blackra1n.com and click 'Add Source'. Close and reopen Cydia and search for the package 'blacksn0w'. Download and it will do it's magic trick.
It is important from here on in to not update to official firmware in iTunes. You WILL lose your unlock and jailbreak, potentially forever.
Also note that iPhonewzealand in no way support the process of Jailbreaking or Unlocking. Both void your warranty and you may be refused service.

After this you will be able to put in your correctly setup and provisioned XT SIM card. You will also be able to apply the carrier settings as per the instructions on this website and the video tutorials.
It is possible that Telecom did not setup the SIM correctly. If you are fairly sure the unlock worked, call up Telecom and ask them to check it out. I can recall many occasions where this has rectified the issue.

Thanks Mak! I re-installed my AT&T SIM, restored to my most recent image and re-applied the jailbreak and unlock software. With that seemingly working, I took it and my Apple cord to Telecom. They were able to apply the XT configuration settings without difficulty. I must have done that incorrectly. Now all is good.

You can go to MagnumMac and they can legitimately unlock your iPhone.
They actually unlock US phones.

I have installed the updated XT carrier bundle on my iPhone and can now MMS photo's – yipee! However, I still cannot receive or send emails via my .ihug account on my iphone. Is anyone able to give me any settings that might enable this function? BTW – the advice on how to find the ipcc file, from Dan on 15 October 09 is clearer than the pdf instruction for newbies like me. Thanks for this advice, I would have been lost without it.

Ihug, along with several other ISPs only allow connections to their e-mail from their own internet connections (ie. internally).
If you had your iPhone on Vodafone (which is Ihug), you could connect to your Ihug mail.
If you are on any other carrier (eg. Telecom XT), it won't let you connect.
Best to get a proper e-mail not at an ISP, like GMail. You can forward mail from your ISP to it and you can set up Push mail on your phone.

This seems highly unlikely. It would lead to massive amounts of cheap imports coming into the country without the need for people to software-unlock. As they are both a Vodafone dealer and a premium Apple Reseller (and this practice would be a conflict-of-interest to both of these aspects of their business) I have a very hard time believing this.

I have just spoken with MagnumMac (Head Office) and the answer, as we thought, is NO. They do not unlock U.S iPhones or iPhones purchased from any country. Also, if you are purchasing an iPhone from them they require proof that you are a Vodafone customer.

Thanks for clarifying the ihug vs Telecom email position. I have learned a lot using this website, thanks for the service. I am surprised that Telecom offers to sell data plans for iPhones when they can't support the email service universally. Thanks also for the information about Gmail.

No, you don't understand. Telecom XT is 100% fine and is working as normal. It's VODAFONE (aka Ihug) that are restricting connections to their service.
